Friday Bake-Off: Oat Bran Muffins
I know bran muffins are usually selected as a healthier, fiber-filled alternative to more cake-like muffins, but I genuinely like bran muffins. I like the denser, rougher texture, and the sweetness is balanced by the toasty flavor of oat bran. These muffins use half oat bran, half flour for a muffin that is just oat-y enough for me but pleases my kids, too.
I found this one-bowl recipe on Allrecipes, by Bron, but I altered it a bit by incorporating some suggestions from the comments. I started with 1/2 cup brown sugar, 1 1/2 cups oat bran and 3/4 cup each whole wheat and all-purpose flours. I stirred to combine that, then stirred in 1 teaspoon each baking powder and baking soda, and 1/2 teaspoon salt. Once that was well combined, I added 1 cup applesauce, 2 eggs and 1/3 cup vegetable oil. I stirred that to combine, then divided the batter among 12 regular-sized muffin cups with liners. I baked at 400F for 15 minutes, until cooked through.
